LineageOS is one of the most popular custom ROMs around, and certainly the one with the most officially-supported devices. And with GApps flashed to it, it will have all the Google apps support if you want it.
Why sit on an old outdated version of Android when you can have the latest on your older device. Yes, it does involve some flashing but I’ve done probably 6 different phones myself over the last few years and there are excellent how-to guides available. I have had some issues on first attempts sometimes but persevering gets it right and it is well worth the effort. You get a few extra tweaks that even Google’s Android does not give you.
